Evil Dog American Double IPA has been created around a powerful dose of the American Simcoe and Summit hop varieties and a fine selection of malts, which in combination with their special US West Coast craft beer yeast will produce a true craft beer, with potent bitterness and bursting with aromas of pine and grapefruit.

The fermentation got off to a good start, a nice foam on top of the wort less that 24 hours from pitching the yeast.
7 days in and it’s at 6.4% ABV. I’m hoping the yeast will hang on in there and take it up to 7%.

Fermentation is coming to an end. It looks like the final gravity will be 1.009 giving us a final ABV of 7.1% I’m happy with that.
